Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 celery stalks, chopped
  • 2 tbsp. tomato paste
  • 4 cups vegetable or chicken broth
  • 1 and 1/2 cups uncooked lentils, washed and drained
  • 1 bay leaf
  • salt and pepper to taste

Directions

In a large pot, add 1 tbsp olive oil and cook chopped vegetables about 5 to 7 minutes, or until tender. Add tomato paste and stir until combined. Add broth, lentils, and bay leaf. Cook about 30 to 40 minutes until lentils are tender.  Season to taste.  Enjoy!
