Ingredients

  • 2 tbsp. olive oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1/2 cup diced carrots
  • 1 8-oz. package tempeh or firm tofu, crumbled
  • 2 cups canned crushed tomatoes, do not drain
  • 1/4 cup water
  • 1/4 cup hot and spicy barbecue sauce
  • 2 tsp. chili powder
  • 1/2 tsp. dried oregano
  • salt and pepper to taste
  • 8 whole wheat hamburger buns

Directions

Yields: 8 servings

Time: About 30 minutes

Heat oil in a non-stick skillet over medium heat. Sauté onion, celery, carrots and tempeh for about 5 minutes. Stir in tomatoes and the next 6 ingredients. Bring to a boil. Cover, reduce heat, and simmer for 10 minutes, stirring occasionally. Uncover and continue cooking until mixture thickens. Serve on toasted hamburger buns.
