Garden-Style Sloppy Joes

Ingredients
- 2 tbsp. olive oil
- 1 cup chopped onion
- 1 cup chopped celery
- 1/2 cup diced carrots
- 1 8-oz. package tempeh or firm tofu, crumbled
- 2 cups canned crushed tomatoes, do not drain
- 1/4 cup water
- 1/4 cup hot and spicy barbecue sauce
- 2 tsp. chili powder
- 1/2 tsp. dried oregano
- salt and pepper to taste
- 8 whole wheat hamburger buns
Directions
Yields: 8 servings
Time: About 30 minutes
Heat oil in a non-stick skillet over medium heat. Sauté onion, celery, carrots and tempeh for about 5 minutes. Stir in tomatoes and the next 6 ingredients. Bring to a boil. Cover, reduce heat, and simmer for 10 minutes, stirring occasionally. Uncover and continue cooking until mixture thickens. Serve on toasted hamburger buns.
